If you are camping and pursuing outdoor adventures, breakfast is an especially important meal. Keep in mind that a 160-200lb person burns roughly 500 calories during an hour of hiking. If you’re only putting oatmeal into your system before hitting the trail, you’ll lack the proper calories (one cup of oatmeal is approximately 158 calories) to sustain your level of activity.
This breakfast hash recipe is a great solution, mixing the best breakfast ingredients, while requiring little prep or clean-up. Depending on your metabolism and body type, this hash offers roughly 450 calories per serving, which will keep you going for two to three hours on the trail.
No-Fuss Breakfast Hash
Ingredients:
- 2 cartons instant hashbrowns
- 6 eggs
- 1 package bacon
- 1 package shredded cheese
- Scallions
- 2 Tbsp oil of your choice
Directions:
- Boil water and add to instant hashbrown cartons to rehydrate potatoes for 10-15 minutes.
- Drain water from cartons and spread hashbrowns on a dish towel. Ring the hash browns out so they’re as dry as possible before frying.
- Add 1 Tbsp oil to skillet on medium heat. Once heated, add the hashbrowns to the skillet.
- While hashbrowns are cooking, cut bacon into 1” pieces.
- After about 5 minutes, move hashbrowns to one side of the skillet and add the chopped bacon.
- Once the bacon is done (4-5 minutes), mix it with the hashbrowns and spread the entire mixture evenly across the skillet. Next, crack the eggs atop hashbrowns and bacon and let them sit there for 2-3 minutes.
- Mix everything together and add cheese. Cover for 3-4 minutes to let the cheese melt.
- Add scallions and serve with a cup of gourmet coffee from your portable kettle.
